I’m Scotti Lechuga: Pedaler’s Plate recipe designer, editor, endurance sports coach, pro cyclist, and sports nutritionist.
And before all those things, I’m a mom!
What is Plant-Centric?
“Plant-Centric” means most of your daily caloric intake comes from nutritious, plant-based foods. It’s a holistic, creative approach to nutrition. It is not judgy, and I realize not everyone wants to restrict their diet to exclusively plants. Plant-centric just signifies the majority of recipes are plant-sourced, (and raw), when possible. You’ll still find your favorites — just with a much healthier spin!
I’m really stoked you’re here! This blog, and my interest in sports nutrition, happened in a round-about way through my experiences as a professional cyclist. Pedaling and competing around the world showed me that sports and food both bring people together — maybe that’s why you’re here right now!
Nutrition boils down to more than macronutrients, just like sports are more than a workout plan you follow. Food and sports connect us culturally, emotionally, and relationally. Understanding the power of food is the key to unlocking a truly thriving life, and my goal is to show people that plant-centric eating can be really fun…you definitely won’t be missing out!
Pedaler’s Plate is for every[body] but especially for adventurous, active bodies!
